Cooking Up a Great Year!

As back to school looms, I'm starting to think about how to eat healthy when 3 out of the 5 days, I'm running out the door 20 minutes after I get home to take my daughter off to one activity or another.  I know many of you are in the exact same boat.  It's so easy to drive through somewhere, but it's not the healthiest choice. So I'm going to make it a goal to USE MY CROCK POT!

I have been combing the Internet looking for crock pot recipes with 3 ingredients or less.  And I think I found some great ones.  Today, I'm going to share the one that I think will be the easiest and the tastiest!

Doesn't that sound delicious?  I can see it over lettuce and taco chips as a chicken taco salad or, if your family is into walking tacos, it would taste great with nacho cheese Doritos and cheese and lettuce and tomatoes and sour cream and a dollop of guacamole.  YUM!

To help you cook up a great year, I'm going to gift you today with this Halloween-themed freebie.  I know, I know, HALLOWEEN?!?  Summer's not even over yet.  But, hey, we're teachers, and we're always planning a month ahead, and before you know it, it will be the beginning of October.

But that's not all! Be sure to enter the Rafflecopter below, and you will have the chance to win one of these great prizes!  Good luck.

  1. The taco does look tasty...now to convince my hubby that the slow cooker is intended to run all day and won't set the house on fire! Thanks for 'thinking ahead!' The freebie looks real cute!
Have a great new school year!

    1. That's funny, Jennifer. I never realized how many people have slow cooker burning down the house fear. My brother feels the same way.

  6. Thanks for the recipe! I definitely am going to try to use my crockpot more this year and I'll add this to the list of recipes to make. :) I think it would be yummy in a lettuce leaf to cut some of the carbs. :) Thanks for sharing!

    1. I agree, Melissa. I usually eat my taco-y things as a taco salad instead of in a shell. But I do add a few chips for the crunch factor. ;)

  7. I have made those chicken tacos before, and they are sooo yummy! You can do salsa instead of the taco seasoning, and it is yummy too! My whole family eats them up!
